Oklahoma Restaurant Association Culinary Cookoff

The Culinary Cook-off is a cooking competition that takes place during the Oklahoma Restaurant Convention & Expo, September 26 and 27, 2018. Twelve of the most talented chefs in Oklahoma will race the clock to create dazzling dishes using a mystery basket of ingredients. Chefs will compete in various heats until the contest is narrowed down to the last two chefs. Judges will consist of a panel of industry professionals who will critique each competitor on plate presentation, creativity, product taste, and sanitation practices, among other things. For each contestant, the high and low scores will be discarded. Chefs will be competing for a trophy, medals, and cash prizes. In addition to the First and Second place winners, Third and Fourth place winners will be decided upon based on points during the Semi-Finals heats. Rooms With A Heart, Inc. is a not-for-profit 501(c)(3) organization whose principal purpose is to develop and construct customized rooms for children with critical illnesses. We believe a child's bedroom is a special sanctuary where they can rest and find comfort as they heal. Our goal is to create a room that makes each child happy, customizing their rooms to reflect their personalities and dreams. Join us for our annual fundraiser on September 20th, when we will turn the Stokley Event Center into an exciting casino party. Join The Cheese Wench for a hands-on cheese making class! Tomato season is in full swing, so it is the perfect time to learn how to make fresh mozzarella and ricotta, and take home a kit with all of the supplies you will need to make more. We will be using fresh local VAT Pasteurized milk, and enjoy a delicious Caprese salad with our fresh cheese at the end.

Craft Beer Forum of Oklahoma

The inaugural Craft Beer Forum of Oklahoma will be held at Oklahoma State University on Saturday, April 7, 2018. This is the sister event to Wine Forum of Oklahoma, which just completed it's 5th biennial event. Craft brewers from across the nation will join students and administration from the School of Hotel and Restaurant Administration (HRAD) to present a day of education and tasting, followed by an evening Grand Tasting event, complete with the culinary creations of the HRAD programs. Guest chefs from both Tulsa and Oklahoma City volunteer to assist the team in preparing the food.

I have presented a cheese seminar at Wine Forum of Oklahoma since 2013, and I am delighted tp be presenting the "Craft Beer and Cheese" Seminar at this event. Anyone who knows me well is aware that beer and cheese is one of my favorite food and beverage pairings. I have been teaching classes showcasing these dynamic duos for nearly a decade.

In addition to offering an informative, entertaining, and delicious day for craft beer enthusiasts, this event serves a much larger purpose. It raises scholarship money for the OSU School of Hotel and Restaurant Administration. This outstanding program has been preparing the next generation of culinary and hospitality professionals for 80 years.

Today, 300 students learn the art, science, and sense of true hospitality, in part by hosting these wonderful education events. They work tirelessly to implement the skills they are learning in their program, and gain practical experience in hosting and serving a large number of guests at a high-end event.

Every dish has a story, and the best stories have a delicious memory associated with them. Join me for some of my favorite dishes, and the stories that inspired them.

It isn’t that often that I find myself building a menu of seven courses, only to realize that it is entirely vegetarian. Tonight’s stories will include one of my earliest memories of my cheese obsession, an entertaining evening at the drive-in movies, a trip through Treviso, the one dish I must eat to mark the change of a season, an afternoon in Ravenna, and a Southwest spin on my first favorite dessert, inspired my favorite Aunt.

OASIS Adult Day Services "918 Game Night"

Join me at the Stokely Event Center in Tulsa on October the 18th, for an entertaining evening benefitting OASIS Adult Day Services. Food, drinks, trivia, local celebrities, and a lot of laughs await at "918 Game Night."

What is OASIS? Older Adult Services and Interfaith Sharing (OASIS) adult day services is a non-profit, community based program designed to provide affordable daytime care in a home-like environment for cognitively or physically impaired adults. For some adults, Adult Day Care offers an alternative to placement in a long-term care facility. The program helps prevent premature institutionalization by providing a safe and protective environmentin which the participants remain as independent as possible.

2017 Oklahoma Restaurant Association Show & Cook-Off

INDUSTRY PROFESSIONALS, join me August 30 & 31st for the 2017 Oklahoma Restaurant Association Show & Cook-Off! For 2 days, vendors from across the state, and beyond, will convene at the Cox Convention Center for the largest trade show in the state.

During the show, I will be hosting the Culinary Cook-Off with my good friend Sam Bracken. 12 of the state's best chefs will be paired with student assistants, to battle their way through 3 heats involving progressively more challenging "secret ingredient" baskets. They will be working to impress some of the biggest names in OKC food, vying for the Grand Prize trophy, as well as 2nd, 3rd, & 4th place medals. Each comes with cash prizes, and of course, bragging rights.

The trade show is open to all Oklahoma industry professionals, and registration is now open.

Applications to compete will open on June 29th. Participants must be employed by and on current payroll of an ORA member restaurant in good standing as of June 1, 2017. Participants must be able to verify employment status at any time before and during competition. Only one (1) chef per physical property may compete in event. Each student will receive an Urban Cheesecraft Mozzarella & Ricotta kit to use for the class, and take home at the end.

I will have seasonings on hand to spice up your cheese however you like, as well as the necessary ingredients to turn your freshly made mozzarella into a Caprese salad, to enjoy just as it is made...my favorite way!

Don't dress up, we may get a little messy!
